Gyuto
A gyuto is the Japanese-style answer to an all-purpose chef knife. It is built for serious daily prep: proteins, onions, herbs, squash, carrots, weeknight dinners, and the kind of longer cooking days where a knife either earns its place or gets set aside. For many cooks, a gyuto is the first custom kitchen knife that makes sense because it can cover the most board time without asking you to change everything about how you cook.
The gyuto builds in this archive were handmade by Rick at Honest Knives in Rocklin, CA, USA, and they show how much room there is inside one knife type. Notice the blade lengths, steel choices, grind thickness, tip shape, handle materials, and finish styles. Some builds lean nimble and precise; others are more workhorse-minded. None of these examples should be treated as current inventory. They are archived custom builds and proof of workmanship. Current availability comes through limited batches and the waitlist.
