Angel is an archived 8-inch gyuto build handmade by Honest Knives in Rocklin, CA, USA. It is shaped as a general-purpose daily kitchen knife: long enough for efficient vegetable prep and protein work, but still fine balanced so it stays comfortable through the ordinary rhythm of home cooking.

The blade uses AEB-L stainless steel with professional vacuum hardening and cryogenic treatment. Its Super Nasty distressed finish gives the face a rugged, high-contrast texture while keeping the working edge clean and ready for regular prep. The cutting profile is meant to feel capable without being overbuilt, giving Angel a practical balance of control, toughness, and fine cutting performance.

The handle gives the build its warmer contrast. Dark curly rosewood forms the main grip, while spalted maple appears in both the spacer and butt cap. Against the distressed blade finish, that mix of dark figure and pale spalted maple makes Angel feel worn-in, distinctive, and ready for daily use.
