Nakiri

A nakiri is a vegetable-focused kitchen knife with a straighter edge profile that rewards clean push cuts. It is the knife to study if your prep work is heavy on onions, herbs, greens, cabbage, peppers, potatoes, carrots, and other root vegetables. The flat profile helps keep more of the edge on the board, which makes it useful for tidy, repeatable cuts without the rocking motion many cooks use with a chef knife.

The nakiri examples here are archived custom builds handmade by Rick at Honest Knives in Rocklin, CA, USA. Pay attention to blade height, length, steel, grind, edge thinness, handle material, and finish. A nakiri can be thin and precise, but it still has to be built for real kitchen use. These past builds show the decisions behind that balance. They are not currently available inventory; they are proof of prior work and a guide for what to expect from future limited batches.
