Nola is an archived 8-inch gyuto build handmade by Honest Knives in Rocklin, CA, USA. With an 8-inch blade, 13.25-inch overall length, and 2.1-inch heel height, it is built as a heavy-duty workhorse for cooks who want a tough daily prep knife with extra confidence behind the edge.
The blade uses AEB-L stainless steel with professional vacuum hardening and cryogenic treatment. Its extreme distressed finish gives the blade a rugged, weathered surface that fits the workhorse intent of the build. The geometry is meant for tougher board work and demanding kitchen tasks while still keeping the long gyuto profile useful for slicing, chopping, and general prep.
The handle uses spalted maple as the main visual anchor, paired with an ebony and dyed turquoise burl spacer. That combination gives Nola a strong contrast: pale, heavily figured wood at the grip, a dark ebony break near the blade, and a bright turquoise accent that stands out against the distressed steel.
